Low Carb Chicken Club Sandwich Lettuce Wrap

Low Carb Chicken Club Sandwich Lettuce Wrap

All the flavors of a classic chicken club, wrapped in crisp lettuce with bacon, cheese, avocado, and a tangy mayo-Dijon sauce.

Ingredients

  • 8-12 leaves iceberg or large romaine lettuce rinsed and well dried
  • 1 lb boneless skinless chicken breasts patted dry
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • salt to taste
  • black pepper to taste
  • 8 slices bacon cooked crisp
  • 4 oz cheddar or Swiss cheese sliced
  • 1 large tomato thinly sliced
  • 1 ripe avocado sliced
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice
  • 1 tbsp fresh chives finely chopped, optional
  • 1/4 cup pickle chips optional
  • 1/4 cup red onion very thinly sliced, optional

Instructions

  1. Heat the oven to 400°F (204°C). Arrange bacon on a lined sheet pan and bake 12 to 15 minutes until crisp; drain on paper towels. Alternatively, cook in a skillet over medium heat until crisp.
  2. Season chicken with salt, pepper, paprika, and garlic powder. Heat olive oil in a skillet over medium-high; cook chicken 4 to 5 minutes per side until the center reaches 165°F (74°C). Rest 5 minutes, then slice thinly.
  3. In a small bowl, stir together mayonnaise, Dijon, lemon juice, and chives (if using) until smooth.
  4. Lay a sheet of parchment on your work surface. Overlap 2 to 3 large lettuce leaves to form a rectangle. Pat dry again if needed.
  5. Spread a thin line of sauce down the center of the lettuce base. Layer on sliced chicken, bacon, cheese, tomato, and avocado. Add onion and pickles if using.
  6. Fold the short sides of the lettuce over the filling. Use the parchment to help roll tightly from the long side into a compact wrap.
  7. Let the wrap rest seam-side down for 3 to 5 minutes to set. Slice in half with a sharp knife.
  8. Repeat with remaining ingredients. Serve with extra sauce and freshly cracked black pepper.

Notes

  • Double-layer your lettuce for a sturdy, no-drip wrap.
  • Keep wet ingredients like tomato and pickles in the center to protect the lettuce.
  • For meal prep, store components separately and assemble right before eating.
