Ingredients
1 1/2 lb boneless skinless chicken thighscut into 1-inch pieces
kosher saltto taste
1/2 tsp black pepper
1 tsp garlic powder
1/2 tsp smoked paprika
1 tbsp olive oil
3 tbsp unsalted butterdivided
4 cups broccoli floretsbite-size
1/3 cup low-sodium chicken broth
4 cloves garlicminced
1 tbsp fresh lemon juice
1/4 tsp red pepper flakesoptional
2 tbsp fresh parsleychopped
1/4 cup grated Parmesan cheeseoptional, for serving
Instructions
Pat chicken dry with paper towels. Season with a big pinch of salt, black pepper, garlic powder, and smoked paprika; toss to coat.
Heat a large 12-inch skillet over medium-high heat. Add olive oil and 1 tablespoon butter.
When the butter foams, add half the chicken in a single layer. Sear 2 to 3 minutes per side until golden and cooked through to 165°F (74°C). Transfer to a plate and repeat with remaining chicken.
Reduce heat to medium. Add broccoli to the empty skillet with chicken broth and a pinch of salt. Cover and steam-sauté 3 to 4 minutes until bright green and crisp-tender; uncover and let remaining liquid bubble off.
Push broccoli to the edges. Add remaining 2 tablespoons butter and the minced garlic to the center; cook 30 seconds, stirring, until fragrant. Sprinkle in red pepper flakes if using.
Return chicken and any juices to the pan. Toss everything in the garlic butter, cooking 1 to 2 minutes to heat through.
Turn off heat. Stir in lemon juice and parsley. Taste and adjust salt and pepper.
Serve hot, topped with grated Parmesan if you like. The sauce should lightly coat the chicken and broccoli with a glossy finish.
Notes
Cut chicken into even 1-inch pieces so they sear and cook at the same rate.
If using chicken breast, lower the sear time slightly to keep it juicy.
For extra sauce, add 2 more tablespoons broth and simmer 1 minute before finishing with lemon.
