20-Minute Keto Chicken Zucchini Skillet

20-Minute Keto Chicken Zucchini Skillet

A creamy, cheesy, low-carb chicken and zucchini skillet that uses rotisserie chicken and one pan. Perfect for an easy keto dinner when you’re exhausted.

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 lb rotisserie chicken, shredded about 4 cups
  • 2 medium zucchini halved lengthwise and sliced into 1/2-inch half-moons
  • 3 cloves garlic minced
  • 1/2 cup cherry tomatoes halved, optional
  • 3 cups baby spinach loosely packed
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth low sodium
  • 2 oz cream cheese softened, cut into cubes
  • 1 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes optional
  • salt and black pepper to taste
  • 1 tsp lemon juice fresh
  • 2 tbsp fresh parsley chopped

Instructions

  1. Heat a large skillet over medium-high heat. Add olive oil and butter until melted and foamy, about 30 seconds.
  2. Add zucchini in an even layer, season with a pinch of salt and pepper, and cook without stirring for 2 minutes to get light browning. Toss and cook 2 to 3 minutes more until just tender-crisp.
  3. Stir in garlic and cook 30 seconds until fragrant. If using cherry tomatoes, add them now and cook 1 minute to soften.
  4. Pour in chicken broth and heavy cream. Add cream cheese cubes, Italian seasoning, and red pepper flakes. Reduce heat to medium and simmer, stirring, until the cream cheese melts and the sauce turns smooth, 2 to 3 minutes.
  5. Fold in shredded rotisserie chicken and spinach. Cook, stirring, until the chicken is warmed through and the spinach wilts, 1 to 2 minutes.
  6. Sprinkle mozzarella and Parmesan over the top. Cover the skillet and cook on low until the cheese melts and looks glossy, 1 to 2 minutes.
  7. Uncover, squeeze in lemon juice, and taste. Season with additional salt and pepper as needed.
  8. Serve hot, topped with chopped parsley. Sauce should be creamy and cling to the zucchini; if too thick, loosen with a splash of broth.

Notes

  • Keep the pan hot so zucchini sears instead of steaming.
  • Cut zucchini into even half-moons so they cook at the same rate.
  • Use pre-shredded rotisserie chicken to save time; dark meat stays extra juicy.
  • For extra richness, finish with an extra tablespoon of butter before serving.
