Guilt-Free Crispy Keto Cinnamon Cream Cheese Roll Ups

Guilt-Free Crispy Keto Cinnamon Cream Cheese Roll Ups

Crispy, sugar-free churro-style roll ups filled with vanilla cream cheese. Make them in a skillet or air fryer in about 10 minutes.

Ingredients

  • 8 low-carb tortillas (6-inch, keto-friendly) 3–5 g net carbs each
  • 8 oz cream cheese softened
  • 1/4 cup powdered erythritol
  • 1 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon for filling
  • 1 pinch fine sea salt
  • 2 tbsp unsalted butter for skillet, plus more as needed
  • 2 tbsp granulated erythritol for coating
  • 1 tsp ground cinnamon for coating
  • 1 tsp butter or coconut oil spray for air fryer option

Instructions

  1. Make the filling: In a bowl, beat softened cream cheese, powdered erythritol, vanilla, 1 1/2 teaspoons cinnamon, and a pinch of salt until smooth and fluffy, 1 to 2 minutes.
  2. Stir the coating: In a shallow dish, mix granulated erythritol with 1 teaspoon cinnamon. Set aside.
  3. Assemble: Lay out the tortillas. Spread about 2 tablespoons of filling in a line near one edge of each tortilla, leaving 1/2 inch border at the sides.
  4. Roll tightly: Fold the sides slightly over the filling, then roll up snugly. Place seam side down on a plate.
  5. Skillet method: Heat 2 tablespoons butter in a large nonstick skillet over medium heat. Add roll ups seam side down and cook until golden and crisp, 1 to 2 minutes per side, turning with tongs until all sides are browned, 5 to 7 minutes total.
  6. Air fryer method: Lightly spray roll ups with butter or coconut oil spray. Air fry at 375°F (190°C) for 6 to 8 minutes, turning halfway, until golden and crisp.
  7. Coat: While hot, immediately roll each in the cinnamon sweetener mixture to coat all sides.
  8. Serve: Let cool 2 minutes to set the crust, then serve warm. Dust with a pinch of extra cinnamon if you like.

Notes

  • To prevent leaks, start cooking seam side down to seal for 30 seconds before turning.
  • For extra crunch, let cooked roll ups sit on a wire rack for 2 minutes before coating.
  • If using very soft tortillas, warm them 5 to 10 seconds in the microwave to make rolling easy.
