Ingredients

  • 6 slices bacon chopped
  • 1 1/2 lb cooked shredded chicken rotisserie works great
  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded sharp cheddar cheese divided
  • 1/2 cup shredded mozzarella
  • 4-5 fresh jalapenos seeded and finely diced, plus a few slices for topping
  • 2 cloves garlic minced
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt or to taste
  • 1/4 tsp black pepper
  • 1 cup crushed pork rinds pea-size crumbs
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp butter melted
  • 2 tbsp green onions sliced, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Cook the chopped bacon in a skillet over medium heat until crisp, 6 to 8 minutes. Drain on paper towels.
  3. In a large bowl, whisk together the softened cream cheese, sour cream, and heavy cream until smooth. Stir in 1 cup cheddar, the mozzarella, onion powder, smoked paprika, salt, and pepper.
  4. Fold in the shredded chicken, diced jalapenos, minced garlic, and half of the cooked bacon. Spread the mixture evenly in the prepared baking dish.
  5. Sprinkle the remaining 1/2 cup cheddar over the top and add a few jalapeno slices if you like extra heat.
  6. In a small bowl, combine the crushed pork rinds, Parmesan, and melted butter. Scatter evenly over the casserole.
  7. Bake for 20 to 25 minutes, until the casserole is bubbly at the edges and the topping is golden.
  8. Optional: Broil for 1 to 2 minutes to deepen the color on top, watching closely.
  9. Let rest 5 to 10 minutes for cleaner slices. Top with remaining bacon and green onions before serving.

Notes

  • For extra creaminess, add 2 tablespoons of softened butter to the sauce mixture.
  • If using rotisserie chicken, remove the skin and shred while warm for the best texture.
  • Make it ahead by assembling up to the topping; add crumbs and bake just before dinner.
