Instructions
Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
In a large bowl, whisk the softened cream cheese, sour cream, and mayonnaise until smooth. Slowly whisk in the chicken broth until the mixture is creamy.
Stir in the minced garlic, onion powder, 1/2 teaspoon smoked paprika, salt, and black pepper. Fold in 1 cup cheddar and all the mozzarella.
Add the shredded chicken, 1/3 cup of the crumbled bacon, and the chopped green onions. Mix until the chicken is evenly coated.
Spread the mixture into the prepared baking dish and smooth the top. Sprinkle the remaining 1/2 cup cheddar over the surface.
In a small bowl, combine crushed pork rinds, Parmesan, melted butter, and the remaining 1/2 teaspoon smoked paprika until sandy and evenly moistened.
Sprinkle the pork rind mixture evenly over the casserole.
Bake for 20 to 25 minutes, until the edges are bubbling and the topping is golden.
Remove from the oven and rest for 10 minutes to set. Scatter the remaining crumbled bacon and extra green onions over the top.
Serve warm, scooping generous portions so you get creamy filling and crunchy topping in every bite.
Notes
If your sauce seems very thick, add 1 to 2 tablespoons more broth to loosen it slightly.
Use well-drained rotisserie chicken for the best texture and flavor.
For extra heat, add a pinch of cayenne or diced jalapeños to the mix.
Broil the top for 1 to 2 minutes at the end if you want a deeper golden crust.
