Keto Sheet Pan Sausage and Veggies

Keto Sheet Pan Sausage and Veggies

A fast, low-carb one-pan dinner with juicy sausage and roasted veggies. Toss, roast, and serve with lemon and parsley for fresh flavor.

Ingredients

  • 14 oz smoked sausage sugar-free; sliced into 1/2-inch coins
  • 2 cups broccoli florets bite-size pieces
  • 1 medium zucchini halved lengthwise and sliced 1/2-inch thick
  • 1 red bell pepper seeded and sliced into strips
  • 1 yellow bell pepper seeded and sliced into strips
  • 1 cup red onion wedges, separated
  • 3 tbsp extra-virgin olive oil
  • 2 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 3/4 tsp kosher salt or to taste
  • 1/2 tsp black pepper
  • 2 cloves garlic minced
  • 1/4 tsp red pepper flakes optional, for heat
  • 1 lemon cut into wedges, for serving
  • 2 tbsp fresh parsley chopped, for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Place a large rimmed sheet pan on the center rack to heat while the oven preheats.
  2. In a large bowl, combine broccoli, zucchini, bell peppers, and red onion. Drizzle with olive oil and toss to coat.
  3. Sprinkle Italian seasoning, smoked paprika, salt, black pepper, minced garlic, and red pepper flakes over the veggies. Toss again until evenly seasoned.
  4. Remove the hot sheet pan and carefully spread the veggies in a single layer. Scatter sliced sausage over the top, spacing pieces so nothing is crowded.
  5. Roast for 12 minutes, then use a spatula to flip the veggies and sausage. Return to the oven and roast 8 to 12 minutes more, until the sausage edges are browned and the veggies are crisp-tender with caramelized spots.
  6. Squeeze 2 to 3 lemon wedges over the pan and toss gently. Taste and adjust salt or pepper if needed.
  7. Garnish with chopped parsley and serve hot with extra lemon wedges on the side.

Notes

  • Dry veggies roast better. If you’ve rinsed them, pat very dry before seasoning.
  • For extra browning, leave the zucchini cut a bit thicker so it doesn’t over-soften.
  • Double the recipe on two pans and rotate racks halfway to feed a crowd.
  • Swap in cauliflower or Brussels sprouts and start checking a few minutes earlier if cut small.
