1 tbsp olive oil
4 cups romaine lettucechopped
1 cup cherry tomatoeshalved
1/4 cup red onionfinely chopped

1/3 cup sour cream
1avocadosliced
1/2 cup salsano sugar added
2 tbsp fresh cilantrochopped
1limecut into wedges
pickled jalapeñosoptional
1/2 cup crushed pork rindsoptional for crunch
Instructions
Warm a large skillet over medium-high heat. Add the olive oil and cauliflower rice. Cook for 5 to 7 minutes, stirring often, until the rice is tender and most moisture has evaporated. Season with a pinch of salt and set aside in a bowl.
In the same skillet, add the ground beef. Cook for 5 to 7 minutes, breaking it up with a spoon, until browned with no pink remaining. Drain excess fat if needed.
Sprinkle chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, 1/2 teaspoon salt, and a few grinds of pepper over the beef. Stir to coat, then add 1/3 cup water.
Simmer for 2 to 3 minutes, stirring, until the liquid reduces into a saucy coating and the beef is well seasoned. Taste and adjust salt or spices as needed.
Prep toppings while the beef cooks: chop romaine, halve tomatoes, finely chop red onion, slice avocado, and chop cilantro. Cut lime into wedges.
Build each bowl with 1 cup cauliflower rice and 1 cup chopped romaine as the base.
Top with a quarter of the taco beef, then add tomatoes, red onion, shredded cheddar, sour cream, salsa, and avocado slices. Add jalapeños if using.
Finish with cilantro, a squeeze of lime, and crushed pork rinds for crunch if you like. Serve right away while the beef is hot and the toppings are cool.
Notes
For extra fluffy cauliflower rice, cook it hot and avoid covering the pan.
Use 90% lean beef for a lighter bowl or 80% for richer flavor.
Swap cheddar for Pepper Jack if you want a little heat.
Meal prep tip: pack hot and cold components separately to keep textures fresh.
